Making zeytinyagli yaprak Sarma requires patience. This is not a quick dish. This is a dish you respect.

I’ve seen a lot of people make this for a quick weeknight dinner. They throw the rice in a bowl, pick up a jar of leaves and call it a day. That’s not your way. If you want to add a strong herbal flavor to Turkish dishes, you need to follow the rhythm of the ingredients.

I’ll show you how to actually do it. There are no shortcuts. No confusion. Only real food.

Selection and preparation of leaves

The base is the leaf itself. You are looking for salty leaves (Tuzlu yaprak ) or fresh leaves.

If you’re using brine, you’ve already started. As it is preserved, it becomes soft and can be rolled. But they are also very salty. It’s painfully salty.

“Soak the leaves in water overnight to dissolve the salts.

This is not an option. If you skip this step, your dinner will taste like the sea. Soak half a kilo of leaves in cold water. Make it the night before. The water becomes cloudy. Change the water once or twice. It doesn’t matter if the water is clear.

If you use fresh leaves, they must be blanched. Place in boiling water for 2 minutes. Then they were shocked in ice water. This prevents it from cooking and keeps it bright green. However, in brine, the leaf is easier for beginners. Unless you have a vineyard in your backyard, just use brine.

Ingredients: rice, herbs, soul

The taste is in the filling. It’s simple, but proportions matter.

You will need 3 cups of rice. Short grains are better. They stick together. Long grains can cause a dry mess. Do not use ground rice.

You need 3 onions. Finely chop. I don’t want it to stay crunchy, I want it to melt into the rice.

Now for the spices. This is the heart of Turkish cuisine.

  • 1 teaspoon of dried mint.
  • 1 teaspoon of red chili pepper (Pul Biber ).
  • 1 teaspoon of dried thyme (kekik ).
  • 1 teaspoon of black pepper.

Add 1/2 tablespoon of tomato puree. This gives it a bit of acidity and color.

If desired, add chicken stock cubes. Optional. I often add it because it adds a flavor that plain water doesn’t have. However, if you are a vegetarian, skip it. Olive oil and herbs are important.

Finally, mince 3 cloves of garlic. Also chop a handful of fresh parsley.

Mix all this with a tablespoon of vegetable oil and salt. Taste before rolling. It should be slightly too salty. Rice absorbs water during cooking, which weakens the taste. Although it tastes “perfect” when you taste it, it becomes bland when cooked. The filling isn’t seasoned enough. Too much patience.
